The cloudy juice was chilled and transferred to a couple of 800L Spanish clay Amphora (see photo) for fermentation and maturation on yeast lees before bottling unfiltered

The Cabernet grapes were handpicked from the Tokar Estate vineyard

The tannins are present but soft and will see the wine age for a decade or two for the patient but it is delicious drinking now

2022 Yarra Valley Cabernet Sauvignon The cloudy juice was chilledThe Cabernet grapes were handpicked from the Tokar Estate vineyard, destemmed and gravity fed to a stainless steel fermenter with a sprinkling of stalks added for an extra layer of tannin. I let the ferment start with wild yeasts and kept the wine on skins for four weeks for gentle extraction. The wine was pressed off to 300L French oak hogsheads for maturation. The result is a vibrant, classically styled, medium bodied Yarra Cabernet full of black
